Tarragon Chicken Salad

"This fancy chicken salad recipe might take a little more effort to prepare, but it's well worth the time. I often serve it as an appetizer at showers and luncheons by serving scoops of it wraped in napa cabbage leaves. I always get raves!"

Original recipe yields 6 servings

  1. Add chicken broth, 2 tarragon stems, and crushed garlic cloves pot and bring to simmer.
  2. Add chicken breasts and poach for about 25 minutes of until cooked through.
  3. Remove breasts and set aside to cool.
  4. Shred and slighty chop the chicken breast and combine with red onion and celery.
  5. Season mixture with salt and pepper.
  6. Add finely chopped rosemary and the remaining tarragon. Mix in mayonnaise.
  7. Taste and season with salt and pepper.
