  1. Ensure turkey is COMPLETELY thawed.
  2. Remove inards.
  3. Cut extra skin away from the neck area and make sure neck hole is at least an inch in diameter.
  4. Liberally salt and pepper the turkey, inside and out.
  5. Cook the turkey for 3.5 minutes per pound of bird.
  6. Let cool for 15 minutes, carve and serve.
