  1. In a big pot, cover bottom with oil.
  2. On low heat add onion, cook until onion is transparent,add garlic and pepperoni. Cook on low for 5 minutes.
  3. Wash escarole well, cut into bite size pieces, add to pot mixture and cover.
  4. Cook until greens are tender.
  5. Add beans, salt and pepper.
  6. Simmer for another 10 minutes.
  7. Serve.
