  1. Season chicken with cumin and thyme and grill.
  2. Cut into bite-sized pieces or smaller when done, set aside.
  3. While chicken cooks, add olive oil to large soup pot.
  4. Add celery and onion to pot, saute 5-10 minutes.
  5. Add broth, water and tomatoes to pot, bring to boil.
  6. Reduce heat to simmer and add chicken, beans and corn to pot.
  7. Cook another 5-10 minutes or until chicken is warm enough.
  8. Add additional seasonings to taste.
