Hot Dog Soup I

"Hot Dog soup may sound like a goofy idea for a recipe, but don't judge this soup by it's name! This is the ultimate comfort food. Serve with Ritz crackers and/or croissants and a side salad and you have one satisfying meal! Did I mention that it's perfect on a cold winter day?!"

  1. Melt butter in a large soup pot over medium heat.
  2. Add celery, and saute for one minute.
  3. Add onions, garlic and hot dogs.
  4. Saute until onion is almost translucent, stirring occasionally.
  5. Add milk and lower heat to medium low.
  6. Cover with lid. Stir frequently so milk doesn't stick to bottom of pan.
  7. Meanwhile, place potatoes in a saucepan, cover with water and bring to a boil. Boil potatoes until easily broken with a fork. Drain and add to milk/hot dog mixture.
  8. Add chopped eggs, parsley, pepper and dash of cayenne pepper to hot dog/milk mixture. Stir.
  9. Bring soup to simmer, stirring often.
  10. Salt to taste.


My husband can't get enough of it. Even my 4 year old has started requesting hot dog soup on a weekly basis!
