  1. Peel and slice red onion in 2 to 3 large pieces
  2. Grill until onion is slightly blackened (char)
  3. Chop the red onion into small pieces after grilling
  4. Dice the mango and cut up red pepper
  5. Mix onion, mango, pepper, and puree
  6. Heat on stove top for three minutes at medium heat
  7. While heating, stir in scallions and cilantro
  8. Spoon over entree.
