warm soybean salad

"i invented this salad because fava beans are not often available and expensive. it is my adaptation of simple side dish my husbands mother makes and is full of texture, flavor, and nutrients. soy is the wonder food and is full of protien for a low or meat free diet. We like to serve this with blackened mahi mahi and bread."

  1. Heat a small amount of oil in a large frying pan. Add chopped carrots and celery and fry until soft. add chopped mushrooms and onions cook until browned and caramelized. add garlic and zuccini. cook a few minutes before adding soybeans. season with peppper.
  2. Cover with water and add one boullion cube. Leave uncovered until water evaporates. repeat this step three times, or until soft and well mixed. Add salt if necessary.
