  1. Preheat oven to 325 degrees.
  2. Season flat iron wteak with salt, pepper, garlic powder, and onion powder on all sides.
  3. Heat heavy duty skillet over medium high heat.
  4. Add 2 teaspoons oil and heat until oil is shimmering.
  5. Add steak and sear over medium high heat on all sides until well browned.
  6. Remove steak from pan.
  7. Lower heat to medium.
  8. Add remaining teaspoon oil to pan.
  9. Add Cremini mushrooms and saute until brown and wilted.
  10. Lower heat to medium low.
  11. Add Burgandy wine and cook for about 3 to 5 minutes.
  12. Add beef stock.
  13. Mix butter and flour with fork into a paste and stir into pan.
  14. Return flat iron steak to pan and place steak in oven.
  15. Cook in oven for about 10 minutes.
  16. Remove from oven.
  17. Remove steak and slice in thin slices on diagonal against the grain and place on platter.
  18. Add heavy cream to sauce and stir in well.
  19. Pour sauce and mushrooms over sliced steak and garnish with chives.
  20. Serve over roasted potatoes if desired.
