  1. Bring rice, cardamom pods, and water to a boil. Reduce heat, cover, and simmer until rice is done (approx. 30 minutes)
  2. Rinse grape leaves and soak in warm water. Change water every 10 minutes or so
  3. Let rice cool. Mix with onion, persimmon, mint, and season to taste
  4. Lay out one grape leaf, stem facing up, put 2-3 T of rice filling in the center depending on the size of the lead, fold the bottom parts over the filling, then fold in the sides, and tightly roll towards the top of the leaf
  5. Repeat with the rest of the leaves
  6. Steam leaves for 20-30 minutes until leaf is tender and filling is fully cooked
