Chop onions and garlic and add to large non-reactive bowl. Mix in mint, oil, vinegar, additional seasonings to taste, and salt and pepper to taste. Cover and refrigerate until usage.?
Take loaf and cut on the bias into 1” pieces. Lightly brush with olive oil and broil until golden brown on top, about, 2-3 minutes. Use a fork to top the breads (while still warm) with the onion mixture. Garnish with additional mint, if desired.
