"A fun, simple side that my mom taught me. She called them Billetas. I have no idea what the proper term for them is, if any. It takes seconds to do and tastes great. These can be made with any leftovers from frying chicken, fish or anything else."

Original recipe yields 2 servings

  1. Heat oil in frying pan over medium heat.
  2. Place breadcrumbs in a bowl and add beaten eggs. Mix until thick. If it remains watery, simply add more breadcrumbs.
  3. Roll a small amount of mixture into a ball (about the size of a golf ball) and then press into patties.
  4. Fry on each side until golden brown. Usually 30 seconds to a minute. When done, place on a paper towel to dry.
  5. Enjoy with Applesauce.
