  1. Sift together the flour, baking soda and salt.
  2. Cream together the butter and packed brown sugar adding the egg and egg yolk, beating well.
  3. Blend in the vanilla and maple flavoring.
  4. Add dried sifted ingredients gradually and mix throughly. Dough will be soft and can be chilled to make handling easier.
  5. Arrange split pecan halves in groups of 3 to 5 on greased baking sheet to resemble a turtle.
  6. Mold dough into 1 rounded tsp. ball; dipping bottom of ball into reserved unbeaten egg white and press lightly onto nuts.
  7. Bake at 350 degrees for 10-12 minutes. Let cool.
  8. Heat caramel topping in microwave and dribble over cooled cookies with a spoon.
  9. Remove foil from frosting and microwave for 30 to 45 seconds till frosting becomes liquid. Take a spoon and dribble over caramel cookies till coated in chocolate. Put in fridge till set.
