  1. Preheat oven to 400 degrees, place the 1/4 cup butter in a rimmed cookie sheet and place in the heating oven to melt.
  2. Meanwhile, mix the herbs and spices into the potatoe flakes, and whisk the eggs in a seperate bowl.
  3. Dip the chicken stips into the eggs, then roll in the seasoned potatoes. Cook on the buttered pan for 20-25 minutes, flipping half way through cooking.
