  1. 1. Sprinkle gelatin over 1/4 cup of wine or juice, let stand 1 minute to soften.
  2. 2. Bring 1 cup of wine or juice to boil with sugar until sugar is dissolved.
  3. 3. Remove from heat and add gelatin mixture, stirring until gelatin is dissolved.
  4. 4. Stir in remaining wine or juice and lemon juice until dissolved.
  5. 5. Cool mixture, stirring occasionally, until room temperature (It helps to place mixing bowl over a larger bowl of ice).
  6. 6. Cut up fruit and arrange fruit in a glass 1&1/2 quart bowl or loaf pan, (terrine).
  7. Pour cooled mixture over fruit and refrigerate until firm, at least 8 hours.
  8. 7. To unmold, dip outside of glass container into a larger container with hot water, 3 to 5 seconds to loosen. Do not let hot water spill over into terrine.
  9. 8. Place serving plate over top of terrine and turn over to invert onto plate.
  10. Note: some people line the terrine with plastic wrap, put the fruit in and pour the mixture over, chill and then they don't have to worry about the hot water to loosen.
