  1. Add olive oil to bottom of dutch oven. Add chuck roast, turn several times to coat on all sides. Sprinkle with salt and fresh ground pepper. Cover and heat to 250 degrees for two to three hours. Check temperature with internal meat thermometer.
  2. To serve, either cut into portions or shred for use in barbecue sandwiches with your favorite sauce.
