Old Fashion Date Drop Cookies

"Not the traditional date cookie. If you like dates you will love this recipe. This is an old recipe from my great grandmother from Iceland. This cookie is a family favorite and has a crunchy texture and softens as it sits. The cookie is very light in flavor but the filling is what makes the cookie. This cookie is very unique and great tasting. This cookie is wonderful after it has been frozen."

  1. Mix all ingredients for filling together in a saucepan. Cook over low/medium heat until dates are tender and mixture starts to thicken. More water may need to be added. Cool mixture. Set aside.
  2. Cream Shortening and brown sugar with a mixer on low speed until light in color and creamy. Blend in eggs and mix well. Mix in warm water, vanilla, and mix well. Blend in dry ingredients.
  3. Drop about 1 TBSP of dough onto cookie sheet (about 2 inches apart) Take a spoon and spread out dough a little.
  4. Top dough with about 2 tsp of filling and top with about 1 tbsp of dough.
  5. Bake at 375 for about 10-12 minutes. (Or until golden brown.)
  6. If you like the cookies crunchy...cook a little longer.
