  1. In a bowl beat butter and sugar until creamy. Add egg and beat again until well mixed. Sift flour and Vanilla Sugar into butter mixture and beat until combined. Knead shortly and form into a ball. Cover with aluminum foil and place in refrigerator for about an hour or overnight!
  2. Roll out half of the dough very thinly and cut with a 2” cookie cutter circles out. Roll out remaining dough and repeat, except this time take the circles and make another smaller hole (with ½” cutter) in center. Place on a with baking paper (parchment!) lined cookie sheet and bake in a 375 F oven for about 8 – 10 minutes or edges are golden brown.
  3. Let cookies cool on a wire rack! Dust circles (with hole in center) with powder sugar and set aside. Take red current jelly and stir in a small bowl until smooth. Place some of it onto the cookie rounds and place one powder sugar coated circle on top. Enjoy.
