Add chicken and all ingredients (except the beans, onion and green pepper & 1 T oil)together in a large bowl. Mix well and let sit in refrigerator for at least 30 minutes.
When ready, pour the whole chicken mixture into a large pan & saute on med-high until chicken is cooked through. Add beans and heat through completely on low heat. Reduce heat and keep warm.
In another frying pan saute the onions and green pepper in the remaining oil until tender. If you prefer a caramelized flavor, saute a little longer.
Serve with warm tortillas by placing chicken mixture inside the tortillas along with the onion and green pepper.
*** Serving suggestion: You can add all the favorite/popular stand-by add-ins like shredded cheddar or Monterrey Jack cheese, salsa, sour cream, guacamole, black olives etc,...... Get creative in accordance to your own individual taste! Also, serving this with a great Spanish rice recipe, rounds out the meal nicely.
