  1. After potatoes have cooled, mash about 1/3 of them in a large bowl. Stir in eggs, bell pepper, celery, tomato, relish and bacon. Add enough mayonnaise to make mixture slightly creamy but still thick enough to stick together. Add mustard if desire, salt and pepper to taste.
  2. Cover and chill for several hours. Before serving, uncover to let the unfavorable smell disapate. Garnish with paprika.
