  1. Preheat oven to 350 degrees.
  2. Spray muffin tin with cooking spray that contains FLOUR (very important).
  3. Mix the flour, sugar, chocolate chips, unsweetened cocoa, baking powder, and salt in a large bowl.
  4. Place ricotta cheese in a separate bowl.
  5. Add the eggs, one at a time, beating well after each addition.
  6. Whisk in the milk and vanilla until blended.
  7. Fold the cheese mixture and oil into the flour mixture until just blended.
  8. Spoon the batter into the muffin cups, and bake for 22-25 minutes, or until a toothpick inserted in the center comes out clean.
  9. Remove muffins from pan immediately and cool on a wire rack.
