2)Boil the potatoes in lightly salted water until tender. Mash together with butter and cream. I generally use about two tbsp butter and half a cup of cream but that is a personal choice. Set aside for later.
3)In a large frying pan over medium heat, saute the carrot and onion in vegtable oil until the onion is translucent.
4) Add the mince to the pan and cook until brown.
5) Next add the herbs, tomato paste, cumin, salt and pepper to the pan. Pour in the veg stock and bring to the boil, then reduce heat and simmer until reduced.
6)Pour the meat mixture into a casserole dish and top with mashed potato and cheese. Wrap the top of the dish in foil and put in the oven for 20 minutes. After this take the foil off and put the dish back in the oven for about 10 minutes or until the cheese is browned.
