  1. Fry onion gently in butter and oil in a frying pan for 5 minutes, then add peppers and cook for another 5 minutes.
  2. With a slotted spoon, remove and put into casserole.
  3. In the same oil, brown the turkey, and add to casserole
  4. Add mushrooms, apple, garlic and wine and stir to mix.
  5. Add bouquet garni, salt and pepper.
  6. Cook for 1½ to 2 hours until turkey is tender.
  7. Remove herbs.
  8. Serve with boiled rice.
