  1. In large saucepan, heat chicken broth and diced chicken to boiling. Reduce heat to medium.
  2. Add salsa, jalopeno, brown rice, and cilantro. Simmer for 10-15 minutes.
  3. To serve, ladle soup into bowl, slide in avocado slices, top with 1 ounce sour cream and grab the chips!! Very satisfying, quick meal.
