  1. Heat oven to 350 degrees.
  2. Heat oil on medium heat in large skillet.
  3. Season chicken with salt and pepper and add to oil. Brown on each side, about 8 minutes per side.
  4. Remove chicken from skillet and place in 9" x 13" baking dish that has been sprayed with non-stick cooking spray or lined with aluminum foil.
  5. Cover chicken with BBQ sauce, basting to cover well.
  6. Top each breast with a layer of sliced onions, then a layer of sliced mushrooms.
  7. Top each breast with 2 slices of bacon, crossed over.
  8. Cover with aluminum foil and bake in oven for 35-40 minutes, or until chicken juices run clear.
  9. Remove from oven and sprinkle with Monterey Jack cheese.
  10. Return chicken to oven, uncovered, for 10 minutes, or until cheese is bubbly and slightly browned.
  11. Remove from oven. Let stand 5 minutes, then enjoy!!
