Layered Strawberry Cake


"I got this recipe from Mr. Food I believe (I know he's on TV here in Iowa, I'm not sure about anywhere else). This cake is simple, easy and amazing. I made this for my son and my 4 younger siblings and it was gone in 30 minutes!"

  1. Beat first 4 ingredients at low speed until cake mix is moistened. Beat at medium speed for 4 minutes. Pour batter into 2 greased and floured 9 inch round cake pans.
  2. Bake at 350 for 18-20 min. Cool on wire racks for 10 min. Brush top of each layer with 2 tablespoons preserves. Cool completely on wire racks.
  3. Beat remaining preserves with whipping cream and powdered sugar at high speed util stiff peaks form.
  4. Place 1 layer on serving plate. Arrange half of strawberries over layer. Top with half of whipped cream mixture. Repeat with remaining layer. Garnish with extra strawberries.
