  1. To make crepes: Combine all ingredients in a blender and blend until smooth.
  2. Heat a small skillet over medium heat and coat lightly with cooking spray.
  3. Pour in enough batter to evenly coat bottom of skillet.
  4. Cook on both sides until lightly browned or seems done.
  5. Place on plate in a stack while you make filling.
  6. To make filing: Combine...
  7. Cream cheese, sugar, lemon juice, lemon rind & vanilla.
  8. Mix with a hand mixer until well blended. Fold in whip.cream
  9. Fill crepe with 1/3 c. fruit & 1/3 c. cream cheese mixture.
  10. Roll up. Top w/ remain. cream cheese mixture & fruit.
