  1. Preheat the oven to 375 degrees F. Place the chicken, skin side up, in a non-stick or parchment paper-lined baking dish. Spread a tablespoon of mustard on top of each piece of chicken, and then sprinkle with the herbs, salt, pepper and Parmesan cheese. Roast the chicken for 35 to 40 minutes, or until cooked through.
