  1. Add oil to a 4-5 quart pot over medium heat.
  2. Add the onion, leek and garlic and cook until soft, about 10 mins.
  3. Add the potatoes, water and broth to the pot
  4. Bring to a boil, then reduce heat and simmer 20 minutes until potatoes are soft.
  5. Add the cream and puree with a blender.
  6. Season with salt and pepper to taste.
  7. Top each serving with a little grated carrot.
