Honey Blueberry Bran Muffins

  1. Preheat oven to 400.
  2. Combine flour or flours, bran, baking powder, and baking soda in large bowl. Whisk until well blended. Set aside.
  3. Blend eggs, yogurt, vanilla and butter in large bowl.
  4. Make a hollow in the middle of the flour mixture. Pour egg mixture into the hollow. Stir until just blended.
  5. Fold in blueberries.
  6. Spoon batter into muffin tin or muffin cups. Sprinkle with brown sugar if desired.
  7. Bake muffins for 20 minutes or until an inserted tester comes out clean. Remove muffins from tin (if you're using one). Cool on rack for 15-20 minutes.
  8. Makes 12 muffins.
