Zucchini Casserole Quiche


"Family favorite, uses any additional fresh vegetables or herbs you have on hand. This is an old standby than is fantastic with steak and a salad for a complete summer meal! It has a bread-like quiche consistancy that is perfect for breakfast, lunch or dinner!"

  1. Lightly beat eggs, and add in bisquick, oil, cheese and herbs and spices.
  2. Add in onion and thinly sliced zucchini, mixing well.
  3. Spoon into lightly greased 8 x 10 pyrex pan and bake for 30 to 40 minutes at 350 degrees, untill lightly brown on top.
  4. Note: I have had good luck adding a handful of cut cherry tomatoes or 1/4 cup sun-dried tomatoes, and/or crumbled, cooked sausage too. I hope you give it a try!
