Wine and Dijon Marinated Pork Loin

"This is my very own recipe I created. As they say, practice makes perfect. You can make the marinade and cook the loin immediately or you can let the pork soak in it over-night. Either way, I promise this will be the best pork tenderloin you've ever had. It may seem like a lot of ingredients but it is a very simple recipe and well worth the effort."

  1. Preheat oven to 350F.
  2. Place the pork tenderloin in a deep-sided baking dish.
  3. In a bowl mix together the remaining ingredients. You can adjust the spices to taste
  4. Pour over the pork tenderloin
  5. Cover with foil and cook for about 2 hrs or until juices run clear. Do not over-cook
  6. Remove the tenderloin from the marinade sauce and place on a platter or cutting board. Cover with foil and allow the meat to rest about 20min.
  7. Serve with the marinade sauce.
