Jasmine Teriyaki Fried Rice

If you don't have the brand of teriyaki sauce we use, be sure to use one that is sweet and not too thick."

  1. Combine rice and almonds, add water and broth. Cook in rice cooker or on stove top according to package directions.
  2. Saute onion, carrot, mushrooms, and chicken breast in both types of oils until chicken becomes white. Add red pepper, sesame seeds, and salt and cook an additional minute.
  3. Add rice to vegetables and meat and cook for 1-2 minutes, turning rice constantly. Add teriyaki sauce and continue to turn rice and fry until browned to your liking.
  4. Clear the rice away from the center of the pan, forming a pit in the middle with the bottom of the pan exposed. Add the eggs, stirring immediately to scramble. When eggs are fully cooked, stir them into rice. Serve.
