Flavored Meringue Cookies ~ Low Carb

"A very light and airy low carb treat that satisfies any sweet tooth. You are able to change the flavor to suit your taste. The secret is Sugar-Free gelatin! This is an easy recipe and they bake up beautiful every time. My son enjoys strawberry. He says they taste like cotton candy!"

  1. Preheat oven to 250 degrees F.
  2. Prepare two cookie sheets and line with parchment paper.
  3. Using a 1 gallon size zipper seal bag, cut one corner just enough to slide a large pastry tip (for icing cakes and such) into the slot. Start with 1/4" cut and adjust from there. Set aside.
  4. In a small bowl, combine flavored gelatin and granulated no calorie sweetener (I prefer Splenda)
  5. In large bowl using your electric mixer, beat egg whites until foamy. While beating, add salt and cream of tarter. Add the gelatin/sugar mixture to the egg whites gradually (tablespoon at a time) while beating; beat till stiff peaks form.
  6. After mixing, spoon into the zipper seal bag (do not zip close) Gently twist top of bag squeezing out mixture onto cookie sheet into golf ball size shapes.
  7. Bake 1 hour and 30 minutes; DO NOT OPEN OVEN DOOR WHILE BAKING. Turn oven off open door and allow cookies to cool in the oven. Remove from oven and store tightly in covered airtight container.
