  1. In a bowl combine 6 large eggs, 1 tablspoon of milk and a pinch of salt.set aside
  2. In a skillet, put 3 tablespoons of olive oil and on medium heat soften garlic and onion.
  3. Add sliced mushrooms,sliced cherry tomatoes and spinach.
  4. Add eggs when spinach is wilted.
  5. Add cheese when eggs are 1/2 way done.
  6. salt and pepper to taste.
