  1. Mix sugar and 3/4 c water in heavy pan until disolved. Cook to soft ball stage, 238 degrees.
  2. Remove from heat and add Agar.
  3. Pour in glass mixing bowl.
  4. Cool briefly and then whip until thick and white. Add Vanilla.
  5. Mix 2 T powdered sugar and 2 T cornstarch and spread into a 9 inch
  6. square pan.
  7. Pour marshmallow into the prepared pan, let stand until firm.
  8. Cut into squares
  9. using a wet knife and give a final dust of powdered sugar.
  10. Enjoy!
  11. To make marshmallow cream: Gently heat 16 ounces of prepared marshmallows plus 1/4 cup corn syrup in a double boiler, stirring constantly.
