  1. Boil chicken in pot of water with dash of salt for 15 minutes or until cooked through and chop into bite sized pieces.
  2. While chicken is boiling, chop the onion, garlic, jalapeno pepper and basil leaves, and saute in large saute pan in olive oil for five minutes, stirring often. Set aside.
  3. In a bowl, whisk together soy sauce, honey, 1/4 cup water, peanut butter, lemon juice, and chili pepper.
  4. Add the sauce to the onion mixture in the saute pan and stir together over medium heat.
  5. In a small bowl, mix 2 Tbs. cold water with the corn starch until dissolved and stir it into the sauce in the pan.
  6. Add the chicken and simmer for ten minutes, stirring often.
  7. Serve over hot white rice.
  8. Extra jalapenos can be used if more heat is desired.
