Somewhat healthy Chocolate Chip Cookies

"I love chocolate chip cookies but am also a health nut. I put several recipes together and came up with this one that tastes good and makes me feel a little less guilty than conventional chocolate chip cookies."

  1. Microwave butter in a glass bowl until soft but not totally melted.
  2. Add turbinado sugar to butter and beat until creamy. It is okay if the sugar is grainy.
  3. Beat in eggs one at a time.
  4. Beat in vanilla
  5. Mix together flour, baking soda and salt and stir into the creamed mixture.
  6. Stir in the rolled oats, walnuts and chocolate chips.
  7. Drop onto a parchment lined cookie sheet using an ice cream scoop or measuring cup. The mixture falls apart easily if you do not pack it before putting it on the cookie sheet.
  8. Bake at 350 F for 12 minutes until golden.
