  1. Preheat oven to 350 degrees F (175 degrees C). Grease one 9 x 5 inch loaf pan.
  2. Mix flour, baking powder, soda, salt & sugar in a large bowl.
  3. Add the oil, eggs, vanilla, chocolate, coconut and cranberries until dry ingredients are moistened.
  4. Pour batter in the loaf tin and sprinkle some coconut on top.
  5. Bake for about 1 hour 10 minutes or until done.
  6. Cool in the tin for about 10 minutes then transfer to a wire rack to cool before slicing.
