  1. Preheat oven to 350 degrees
  2. lightly oil and salt potatoes and wrap in foil
  3. bake for 1 hr 15 min. or until done
  4. during last 5-10 minutes of baking, lightly saute garlic and onions in oil and set aside
  5. after potatoes are removed from oven, carefully remove foil
  6. cut potatoes into cubes for better blending
  7. place cubed potatoes into mixing bowl and add butter, sour cream, and half and half
  8. beat at medium speed until well blended
  9. add garlic, onion, and cheese and beat on low speed until cheese is well blended
  10. scoop potato mixture into casserole dish and return to oven
  11. bake for 20 minutes
  12. serve as is or with brown gravy
