  1. Preheat oven to 350
  2. Grease bottom and sides of 9 x 13 baking dish.
  3. Brown beef with onion, garlic & mushrooms.
  4. Add cans of tomatoes and simmer for a few minutes.
  5. Peel and thinly slice egglant.
  6. Assemble lasagna....tomato/ meat sauce, noodles, sauce, eggplant, cheese, noodles, sauce, eggplant cheese, noodles, sauce eggplant cheese, noodles, sauce, cheese.
  7. Bake at 350 degrees for 40 minutes or until bubbly and brown on top.
