Peanut Butter and Chocolate Cookie Sandwiches

"These sweet and salty little cookie sandwiches are so much fun to make. Part of the fun is that you can decorate them to fit any occasion. I have drawn frosting hearts for engagement parties, footballs for game day, etc. I have never made these without getting multiple requests for the recipe. Enjoy!"

  1. Place about 2 teaspoons of peanut butter on a cracker, and gently top with another cracker, forming a sandwich. Repeat until all crackers are used up.
  2. Melt almond bark in the microwave in 30 second increments, stirring after each time, until melted and smooth.
  3. Dunk each cracker sandwich into the metled bark and coat evenly. Place on a cooling rack or waxed paper to cool. Repeat until all sandwiches have been coated. Place the sandwiches in the freezer for a few minutes to set.
  4. Remove from freezer and decorate with frosting.
