You can make these pancakes the night before and put them in a ziplock so they still taste fresh in the morning. This is also a great recipe for those bananas that are a bit over-ripe! For a vegan version, just leave out the egg and increase the oil a bit. For a gluten-free recipe, just use a gluten-free flour. I've made these with wild rice flour and they have different texture but still taste great!"
