"Feel good about giving these pancakes to your kids. Not only are they loaded with healthy ingredients, they are delicious without any syrup, which means less mess for mom!!! You can make these pancakes the night before and put them in a ziplock so they still taste fresh in the morning. This is also a great recipe for those bananas that are a bit over-ripe! For a vegan version, just leave out the egg and increase the oil a bit. For a gluten-free recipe, just use a gluten-free flour. I've made these with wild rice flour and they have different texture but still taste great!"

  1. Heat non-stick griddle on med-high.
  2. Put all ingredients in blender and then mix until smooth.
  3. Spoon or slowly pour onto hot griddle.
  4. Flip and cook topside.
