  1. Preheat oven to 325 degrees.
  2. Cut and wash salmon fillet pieces.
  3. Remove small bones and skin, if any.
  4. Line 9x13 (2" deep) baking dish with foil, covering bottom and all sides.
  5. Spread olive oil evenly on the bottom of the foiled pan, just enough to cover the bottom, not too much to create a puddle.
  6. Sprinkle 1/2 tb Tony's seasoning evenly in the oil.
  7. Place each piece of salmon in the pan evenly, about 1/2 inch apart.
  8. Spinkle lemon juice and remaining seasoning on the salmon.
  9. Cover salmon fillets with frozen vegetable medley.
  10. Cover pan with foil and seal sides.
  11. Bake for 25 minutes.
  12. Serve immediately. Makes 4 servings.
