  1. Mix flour, sugar, salt, oil, yeast,and water in a bowl into a flexible dough
  2. Knead for about 8 minutes and let dough rise for two hours
  3. Punch down dough and divide into 6 pieces (or more, for smaller bagels)
  4. Roll each piece of dough into a sausage shape around 6 inches long. Join the ends to form a circle and set aside for 15 minutes.
  5. Fill a large pot 3/4 with water and bring to a boil. Add honey (optional).
  6. Cook the dough rings in the boiling water until they rise, about a minute for each side.
  7. Remove with a slotted spoon and place on baking sheet lined wtih parchment paper.
  8. While the bagels are still wet,dip into toppings spread onto a plate.
  9. Bake at 475 F for about 15-20 minutes, until the bagels begin to brown.
