Best Ever Bruschetta!

"This is a fail proof version of bruschetta! They turn out so yummy, I cant keep them on the plate for more then 15 minutes. When I make this recipe, the pieces don't see the next day. No Complaints about this recipe!"

  1. 1) cut muffin in half to give 8 pieces. Toast halves in broiler for 2-3 minutes until golden.
  2. 2) Mix garlic, butter, and basil together and spread evenly onto each muffin half.
  3. 3)cut a cross shape at the base of each tomato ( don't cut threw, just cut the skin). Plunge the tomatoes in a bowl of boiling water (this will make the skin easier to peel) After a few minutes ( maybe 10 or so) peel away skin; discard. chop tomatoes and mix with tomatoe paste and olives. Divide the mixture between each muffin.
  4. 4) mix the dressing ingredients and drizzle over each muffin. Arrange the mozzarella on top and season to taste with salt and pepper.
  5. 5) Return to broiler for 1-2 minutes, or until cheese is melted.
  6. 6) ENJOY!

this is always a favourtire and it never lasts long! the english muffins make a perfect cup to hold the amount of tomatoes!
