In large pot, saute beef cubes and onions in oil until meat is no longer pink on medium heat. Add diced potatoes and tomatoes, mix in to meat. Pour beef broth into pot and add enough water to cover meat by 2 inches. Add all remaining ingredients, stir well and let simmer on low for 1-2 hours. For extra spice, substitute 1 can of chopped jalapenos for 1 can of green chiles. Serve hot w/warm flour tortillas.
