Cuban style black beans ( Frijoles Negro)

  1. Rinse and sort beans and discard any stones or debris. Put beans into a pot and soak over night.
  2. The next day cook beans in the same water they were soaked in. Add enough water to cover beans one to two inches. Bring beans to a boil then reduce to simmer.
  3. While beans are cooking fry the bacon in a sauté pan until bacon is cooked but not crisp. Remove bacon from pan and cut into 1 inch pieces.
  4. Add bacon and the remaining ingredients to the beans except for the vinagar and sugar.
  5. Simmer for approximately 2 hours until beans are tender being careful to keep water level just above beans.
  6. When beans are tender add the vinegar and sugar and cook for an additional 5 minutes.
