  1. Wash collards, throughly, removing tough center stems
  2. then chop
  3. In large, deep pot, saute bacon until limp
  4. add onion, garlic & sugar.
  5. Stir in collards.
  6. Cover pot & steam collards about 3-4 minutes or until limp.
  7. Uncover, raise heat to high & reduce pan juices.
  8. Collards may be cooked ahead to this point & re-heated.
  9. Serve with hot pepper vinegar.
