"This recipe from my grandma is unlike any another Peppernuts recipe I've seen. This version has a hint of orange flavor, and does not call for anise. If you've never had Peppernuts, and love crunchy food, these are soooo addicting! These bite-size, "dog food" like biscuits are hard like biscotti, and taste like gingerbread. They are worth all of the effort!"

  1. Heat all ingredients except baking soda and flour in a large saucepan over medium heat until melted.
  2. Stir frequently.
  3. Remove from heat and allow to cool completely.
  4. Stir in baking soda, and flour.
  5. Take a handful of dough and knead it with additional flour until the dough doesn't stick to your hands.
  6. Do this with the remaining dough mixture.
  7. At this time you can continue on to the next step, however, I found that the dough is much easier to cut when it has been refrigerated for 1 hour.
  8. Roll the dough into long strips 1/2 inch thick, and cut into 1/2 inch pieces and place 1" apart on parchment paper.
  9. Bake @ 350' 18-23 minutes, or until brown.
  10. Dough will store well in refrigerater until ready to use.
  11. Store peppernuts in an airtight container.
  12. These freeze great!
