  1. Saute onion in olive oil until clear. Add garlic and cook on low for one minute. Add remaining ingredients and cook for one hour, adding water if necessary to keep sauce from getting too thick. Remove neckbones, and cook sauce for about another thirty minutes. Taste sauce and add more salt or sugar, if necessary.
